Macreddin Smoked Salmon
- We have always been happy with our own Smoked Salmon, but this year we have really cracked it with the most succulent smoke of all. Cut vertically, all three flavors of smoke can be tasted at one time.
St. Tola Goats Cheese
- St.Tola Organic Goat Cheese has been made in Inagh in West Clare since the early 1980's. Siobhan Ni Ghairbhith and her team farm over 250 goats organically, and tonight we are marrying this unigue cheese with the Confit Cherry Tomatoes.
Macreddin Smoked Beef
- We got our first real smoker from Innes Walker 1999. Innes is a fabulous Scottish lady who showed us how to really smoke foods. This Beef is one of our proudest smokes.
Wild Garlic Roast Chicken
- Paul Crotty in Co. Cork produces our Organic Poultry and tonight we have coupled Paul`s superb chickens with fresh wild garlic which we picked in April at our Secret Location.
Slow Cooked Spring Lamb
- Here it is! The Season has started. We are glad to present to you this year's lamb, done in the strawberry Tree way. Cooked at low Temperature for at least 14 hours. We get our lamb from Jimmy Mullhall in Co. Carlow.
Turf Roasted Beef
- Organic Irish Angus Beef roasted in "The Salt Crust" style but using flaked Irish turf to give a full sense of "Terroir".
Steamed Wild Ling, Wild Dillisk Cream
- Colin O'Shea (Our Fishmonger) down in Dungarvan, Co. Waterford brought us some Fresh Ling, which we serve with a Dillisk Cream.
Our Vegetables and Leaves
- Tonight's Vegetables and Salads come from two Organic Farms in Wicklow. Mark and Alan's in Aughrim, and from Denis Healy's in Baltinglass. Between them, they supply the complete vegetables year round for The Strawberry Tree.
