How to prepare Wild Elderflower: Choose a dry day when the dew has dried off. Make sure to harvest when newly in bloom, as far away from traffic fumes as possible and avoid elder trees that border land that is likely to have been sprayed with chemicals. Shake each flower head to get rid of insects and give it a quick rinse under running water. Elderflowers can be used for making wines, vinegars, cordials, syrups, and chutneys, and can be scattered over salads and used in fritters.
