Today, there are many sides to the Food Village. From baking to curing, and foraging to distilling, the Food Village is the only place in Ireland where you can both enjoy organic food and drink and also learn how to find and prepare it
- Bakery
The vast majority of organic bread served in BrookLodge & Macreddin Village each day is freshly baked on site. To be certain we can stand over this promise, each step in its preparation takes place in our dedicated organic bakery. Follow the delicious freshly-baked aroma and pay a visit! - Smoke House
For many centuries, our ancestors smoked food to preserve it and enhance its flavour. Today BrookLodge & Macreddin Village’s smoke house proudly continues this tradition. Delicate aromas released from apple and oak wood chips help create a deliciously flavoursome range of smoked foods including meats, fish, vegetables and of course salmon. - Wild Food Pantry
Most hotels keep their food stores out of sight. Our pride in what we forage, create and obtain from like-minded suppliers means we’re delighted to show off our Wild Food Pantry. This cool and dark brick sanctuary contains cheeses, hanging meats and rows of bottles that hold pickled foodstuffs foraged from the immediate locality. It’s a timeless place which expresses our commitment to honouring natural food and its long-standing traditions.

We passionately believe in spreading the word about organic food and encouraging as many people as possible to embrace it. In every sense, our classes offer hands-on opportunities to understand organic food better and acquire valuable skills.

- Baking Masterclass
Understandably, baking has become incredibly popular in recent years. With full access to our onsite organic bakery, you’ll be introduced to baking techniques that combine a respect for natural ingredients with incredible tastes and textures. While sampling as you learn is essential, you’ll also enjoy a two-course lunch during which you can relax and swap stories with fellow bakers. - Cheese Masterclass
Ireland’s climate creates lush grasslands and contented cattle. In turn, these produce the raw materials that allow the creation of the finest quality cheeses. Our one-day course introduces you to the traditional techniques involved in making soft-ripe cheeses and aged hard cheeses.
During the day, and over a two-course lunch, you’ll learn the secrets of the many delicious artisan cheeses being created by passionate producers across Ireland. - Smoking Masterclass
Smoking food is an entirely natural way of gently preserving meat, maintaining moisture and unlocking incredible tapestries of flavours. During the day, our full-time food smokers will explain precisely how they combine time, the correct wood chips and intuition developed over decades to smoke to perfection. Naturally lunch is included and everything is taught at an easy-going and highly enjoyable pace. - Curing Masterclass
Curing is the ancient skill of preserving meats, primarily using salt. Over the centuries, many natural techniques have been developed and our Curing Masterclass introduces these. Over the course of the day, you’ll learn how to work with beef and game and how our ancestors preserved meat long before the era of electricity and chemicals. As it’s inevitable your mouth will be watering, a two-course lunch is included.
