It’s been a little over a week since we held our annual Wild Foods Dinner here at The Village, and we are still dreaming about the amazing wild dishes that were served up on the night. The evening was filled with laughter, conversation, and the delightful aromas of wild herbs and spices that wafted through the River Room brought BrookHall to life.
Everyone was eager to explore the unique flavours of the wild foods that were prepared with care by the very talented Strawberry Tree Brigade. Some of the foods prepared on the evening included a variety of Wild Irish Game such as Wild Pheasant and Wild Sika. We wanted to take a moment to share with you all a quick peek of some of the exquisite dishes we had the privilege of presenting.
Our Seventh Course was an indulgent and delightful culinary experience. From Inshore Sea Pots and Coast, a Wild Lobster Ravioli.
Our Third Course was a delightful combination of flavours from the woods and hedgerow, a Wild Pheasant and Gorse Terrine.
From the woods and hedgerows comes a delightful surprise, a Wild Sorrel and Wild Fraughan Berry Lollipop. A dish that is unique to The Strawberry Tree Restaurant.
From Macreddin Woods comes a most delightful Digestif that will tantalize the taste buds of any connoisseur, A Digestif of Wild Beech Bark Booze, Vintage ’22.
Wild&Wicklow was a unique and exciting opportunity to gather around the table and experience the beauty of nature through each of the 10 special courses.
Everyone had a wonderful time, and we are already looking forward to our next event. It is always such a pleasure to bring people together and present a sumptuous feast that celebrates the bounty of the Wicklow countryside.
