At BrookLodge & Macreddin Village, sustainability has been part of our story since the very beginning. Since opening in 1999, we’ve continued to find new ways to make more sustainable choices across the Village.

Organic at Heart

Our commitment to organic food has been at the heart of our Green Ethos from the very beginning. We believe in knowing where our food comes from, working with the seasons and making the most of the natural produce available around us.

The Strawberry Tree Restaurant is Ireland’s only restaurant certified by the Organic Trust, reflecting our long-standing commitment to organic and sustainable dining. Our approach extends beyond what we grow and source, with our Wild Foods Forager making the most of the seasonal bounty found throughout our hedgerows and woodland.

Wild ingredients are carefully gathered and preserved using traditional methods, allowing us to enjoy the natural flavours of Macreddin throughout the year. From the kitchen to the table, our focus remains on quality, seasonality and making the most of what nature provides.

Better Choices, Every Day

From renewable and geothermal energy to water sourced from our onsite wells, we’re continually looking for ways to reduce our impact. We carefully separate our waste into sixteen streams, work to reduce unnecessary plastics and packaging, and choose more sustainable alternatives wherever possible.

Even the smaller details matter. Our use of EcoBriquettes, made from recycled hardwood sawdust, gives a useful second life to a material that might otherwise go to waste.

Our Green Ethos reach every corner of Village life — from our kitchens and The Wells Spa to our bedrooms, gardens and the fires that warm the Village.

It’s about the choices we make every day, from the products we use and the energy we consume to how we reduce waste and make the most of the natural resources around us. We’re always looking for new ways to improve, whether that’s introducing more sustainable materials, reducing unnecessary waste or finding better ways to use what we already have.
